Our precious Olive Oil derives from the numerous olive-trees covering about 8 of the 20 hectares of hillside clayey soil surrounding the company, which has been destined to the cultivation of olive-trees and vines for hundreds of years.
From these plants, carefully tended year after year, we obtain the olives which, after passing through a press employing cold pressing procedures, yield a superior-quality extra-virgin oil, which carries with it all the essence of the hills on which these olive trees grow, and are permanently cultivated.
The main qualities of olive-trees present in our territory include Moraiolo, Leccino, Frantoio and Piangente, as well as smaller quantities of other qualities.
The care given to the environment and to the plants leads to a sustainable agronomic system of management, involving a careful selection of the products used for the phytosanitary care of the olive groves, when necessary, and a targeted, mainly organic, fertilisation, in the knowledge that we must simply help plants in the most natural possible way to do what it is already, by nature, destined to do.
Olive harvest is made all by hand, tree after tree, year after year. The manual harvest requires more time and work, but it allows us to preserve our trees from mechanical traumas and to control the olives’ quality directly on the tree.
As we do in the vineyards, we use only organic fertilizer. We use copper and sulphate, trying to avoid the unnecessary treatments. Respect for nature starts from the little things.
